Bring a pot of water to a boil and cook the udon noodles for half the time stated on the package (about 3 minutes). Strain and set aside.

Heat a frying pan to medium heat. Toast the peanuts and sesame seeds for 1 minute. Transfer them to a mortar and coarsely crush. Set aside.

Grate the garlic and chop the green onions.

Heat a frying pan over medium-low heat. Add the chili oil and garlic, sauté for 45 seconds.
Add the sweet paprika, toasted sesame oil, soy sauce, dark soy sauce, rice vinegar, maple syrup, peanut butter, and water. Stir well to create a smooth sauce.

Add the strained udon noodles to the sauce, toss well, and cook for 2 minutes.
Stir in the chopped green onions, then transfer to a serving plate.

Sprinkle with crushed peanuts and sesame seeds for garnish.
